GELLING XUCKER – vegan gelling powder for vegan fruit spreads
The perfect vegan solution for all fans of homemade vegan marmalades, fruit jellies and all fruit spreads – Xucker gelling sugar substitute!
As with traditional gelling sugar, you can choose between the 3:1 and the 2:1 version, i.e. 3 or 2 parts fruit to one part gelling Xucker, with 2:1 gelling Xucker best suited to sour fruits like sour cherries, currants or gooseberries and 3:1 gelling Xucker best for everything else. For jellies you can use slightly less gelling aid – check the pack for details – apart from that it’s just how grandma did it.
Spices like cloves or cinnamon can give marmalades and jams a spicy kick. Our tip? Add a little freshly ground pepper to the recipe – the subtle spiciness really brings out the fruit flavour, especially with sweet fruit.

Xucker, not sugar
Xucker brand sugar substitute is all about sweet indulgence without sugar. The mission was and is to offer as many people as possible the chance to give up normal sugar. The “X” in Xucker comes from the sweetener xylitol, the low-calorie alternative to normal household sugar.
Xylitol can be digested without insulin, and therefore has little to no effect on your blood sugar level. If your body is not used to xylitol, it can have a laxative effect after excessive consumption, but your body will soon adjust after a few days.
Xucker is non-GMO and made from natural and sustainable raw materials such as plant fibres and grains. Gelling Xucker in particular makes a fantastic addition to any plant-based diet, as well as being a lower-calorie option.
