Ingredients
for 2 portions
2 packs of whole veg tortillas, carrot
1 pack of whole veg spread - parsnip
250g vegan alternative to mince
200g brown rice, boiled
½ avocado
¼ cucumber
1 scallion
Pea sprouts as a topping
Olive oil for frying
INSTRUCTIONS
1. Heat the olive oil in a non-stick pan, and fry the vegan alternative to mince in it from all sides until brown.
2. Peel the avocado and cut into cubes. Slice the scallion and cucumber.
3. Using a small plate as a template, cut out the center of the whole veg tortillas to make small tacos. Use the leftover edges to make small tortilla rolls for snacking and dipping.
4. Spread the whole veg tortillas with the whole veg parsnip spread, and fill with the vegan alternative to mince and brown rice.
5. Top the filled tacos with avocado, cucumber, scallion and pea sprouts, and serve.
