Spider’s web pancakes

Ingredients

(serves 2-3)

1 packet Vantastic pancake mix

270ml plant-based drink

Neutral frying oil for cooking the pancakes in

approx. 100g fresh blueberries

a handful of fresh blackberries

approx. 80g vegan alternative to chocolate

edible eyes

INSTRUCTIONS

1. For the pancake batter, mix the Vantastic Foods pancake mix with 270ml plant-based drink to make a batter. Fill the batter into a small piping bag or batter dispenser. Alternatively, cut the corner off of a ziplock bag using scissors, fill it with the batter and use the bag as an alternative to a piping bag.

2. Brush a non-stick pan with a little oil. With the help of the batter dispenser or piping bag, pipe a portion of the batter into the pan in the shape of a spider’s web. Flip carefully, and leave to cook through fully. Repeat this process until you’ve used up all the batter.

3. Melt the vegan alternative to chocolate in a suitable receptacle placed above a saucepan of gently boiling water.

4. Wash the berries and pat them dry with a sheet of kitchen roll. Using a few drops of the melted vegan alternative to chocolate, stick the edible eyes to the berries. Set aside and leave to set for a few minutes.

5. Decorate the cooked pancakes with the berries and a little of the melted vegan alternative to chocolate, and serve.
