Ingredients
For the vegan alternative to gyros:
400g soy chunks
2 tbsp spice mix for gyros
3-4 tbsp olive oil
Salt Pepper
For the alternative to tzatziki:
Half a cucumber
300g vegan alternative to soy yogurt
1 clove of garlic
2 tbsp olive oil
1 tbsp wine vinegar
1 sprig of dill
Salt and pepper
As a side dish:
Pita bread
1 red onion
Half an iceberg lettuce
2 tbsp black olives
2 tomatoes
Half a cucumber
INSTRUCTIONS
1. Boil water, place the soy chunks in a large bowl, and pour the boiling water over them.
2. Leave to stand for 12-15 minutes, stirring occasionally. Strain the chunks and press the liquid out of them.
3. Return them to a large bowl, and mix well with 3-4 tbsp olive oil and 2-3 tbsp gyros spices. Leave to infuse for 15 minutes.
4. In the meantime, wash the vegetables thoroughly and chop them finely.
5. Wash the cucumbers and grate them. Leave the grated cucumber to drain in a sieve. Then place in a bowl, add 1 tsp salt, and leave to stand for at least 20 minutes.
6. Now press the remainder of the liquid out. Place the vegan yogurt alternative in a bowl.
7. Peel the garlic cloves, and crush them into the vegan yogurt alternative using a garlic crusher. Mix in the olive oil, wine vinegar and grated cucumber. Season with salt and pepper to taste.
8. Leave the vegan tzatziki to chill in the refrigerator for at least 90 minutes. Season to taste once more before serving.
9. Start to fry the soy chunks in a pan, and while they’re frying, prepare the rest of the ingredients.
10. Fill the pita bread with the vegan gyros, the veg and the vegan alternative to tzatziki.
