Vegan pancakes with chocolate and berries

Ingredients

For the pancales:

200g flour

3 tbsp cornstarch

1 tbsp granulated sugar

1/4 tsp salt 

2 tsp coconut oil

250ml oat drink

200ml mineral water

 

For filling & decorating:

1 tbsp Violife Vioblock

1 packet Violife Cocospread

2-3 tbsp icing sugar

Strawberries and raspberries for garnishing

Vegan alternative to cream

Cookies, crumbled

INSTRUCTIONS

1. Mix the flour, cornstarch, sugar and salt in a large bowl.

2. Add the coconut oil, oat drink and water. Whisk until you have a smooth mixture.

3. Heat the Vioblock in a pan.

4. Pour one ladleful of the mixture into the pan, then move the pan around so that the batter spreads out evenly. Fry the pancake for around 1-2 minutes on each side until light brown. Remove from the pan and repeat the process with the rest of the batter.

5. Serve the pancakes with Violife Cocospread, berries and the vegan alternative to cream. Dust with icing sugar or garnish with cookies as desired.
